AssyrtikoAssyrtiko is not just a grape. It’s a landscape.

Born on the volcanic soils of Santorini, where vines twist like ancient sculptures to survive the Aegean winds, this noble white variety carries within it the raw energy of the island.

It is known for its searing acidity, mineral backbone, and a distinct saline character — tasting almost like crushed seashells and citrus zest.

But Assyrtiko is also a chameleon: While Santorini gives it tension and salt, mainland regions like Drama and Mount Olympus soften its edge and offer floral, fruit-forward expressions.

Santorini is the historic home of Assyrtiko, one of Greece’s most distinctive white grape varieties.
Shaped by volcanic soil, strong winds, and the deep light of the Aegean, Assyrtiko develops its vibrant acidity, mineral character, and remarkable structure.
